Escabeche, shallots, “Biarritz mash”, horseradish, marjoram
Eggplant / mozzarella cheese
Tomato, red peppers, fig, lard, fennel, lemon thyme
Rack of venison / blood sauce
Green beans, beetroot, blueberries, bacon, peppergrass, clove
